3-Minute Strawberry Nectarine & Avocado Ice Cream

I adore ice creams made with fresh fruit! The cold, creamy texture and fruity flavor satisfies my need for a sweet treat. Ice creams and frozen yogurt are my go-to dessert during the summer months because they help me cool down when the temperatures soar. The temperatures have been in the 100′s all week here in Southern California so I will be eating lots of ice cream!

 

I like to make a variety of different ice creams in my ice cream maker but when I don’t want to wait to eat ice cream I make 3-minute ice creams in my food processor and I can eat them immediately after blending together! I always have frozen fruit on hand because I make smoothies on a daily basis and I like the texture I get when I freeze the fruit before I make it into my smoothies.

 

To make this recipe, all you need is your favorite fresh fruit that has been cut into smaller pieces and frozen until hard. Put the frozen fruit into a food processor and in minutes you have a sweet, creamy, and healthy frozen treat that looks like soft serve ice cream and tastes divine! If you want a firmer texture you can place it in the freezer after blending for around 15-20 minutes if you can wait that long!

 

Today’s recipe takes my basic 3-minute fruit ice cream to the next level with the addition of a lush avocado. Avocado adds a wonderful, creamy texture to the ice cream along with healthy fats that nourish your skin, hair, and body.

 

Avocado has a mild flavor that blends well with the fruit without being too assertive in the ice cream. I like to add a small amount of raw honey to balance the savory flavor of the avocado but you can leave it out especially if your fruit is really ripe and sweet.

 

I used fresh organic strawberries, nectarines, and bananas in my recipe because I like this combination of flavors with the avocado. These fruits also provide some great nutritional benefits that will nourish and help heal the body.  I use additional diced nectarines and some blueberries to top the ice cream with because that’s how I enjoy it but feel free to leave if off if you like.

 

You can also choose whatever combination of fruits that you like to eat. The summer months provides an abundance of delectable choices to choose from including peaches, apricots, plums, blueberries, melons, pineapple, and cherries.

Nectarines are one of my favorite summer fruits. Their sweet, juicy flavor and succulent texture is so delicious! Nectarines are a stone fruit that continues to ripen even after it’s picked from the tree. Nectarines are a fantastic source of flavonoids, carotenes, lycopene, potassium, and fiber that all aid the body in fighting free radicals and toxins. Always purchase organic nectarines to avoid the pesticides that are on conventionally raised nectarines.

3-Minute Strawberry Nectarine & Avocado Ice Cream

Dairy-Free, Vegan, Vegetarian, Paleo, Sugar-Free, Gluten-Free

Makes around 4 cups

2 cups frozen organic strawberries

1 cup frozen organic banana slices

1 cup frozen organic nectarine cubes

1 medium avocado—peeled and pit removed

1 teaspoon pure vanilla extract

1 tablespoon raw honey—optional

 

Topping for each serving of ice cream

⅛ cup diced organic nectarines

⅛ cup organic blueberries

 

1. Place all ingredients in a food processor fitted with the S blade. Cover with lid and blend until creamy.

2. Serve immediately topped with the fresh diced nectarines and blueberries or place in the freezer in a container with a lid until ready to eat.

 

Note: This ice cream will get really hard if you freeze it, so you will need to thaw it out before eating it if you place it in the freezer.
